166 - My First Quinoa Experience - Direct Recipe added below

 Back at the end of summer, I sought out some quinoa.  I've been wanting to make this for quite awhile and finally found what looked to be a good recipe in my Clean Eating magazine!

The first thing I had to figure out was, what exactly is quinoa? 
And where would one find it in the grocery store?
This is the organic quinoa that I purchased.  It seems to be most like rice - it is a grain.  Very tiny small beads that are near impossible to strain without losing a lot of them when you rinse!  Tip - FINE MESH SIEVE!  You can find quinoa in the rice/grain isle, some times the pasta isle.  If you have any trouble - ASK!

 While the quinoa was boiling with cumin, I used fresh lemon and cilantro with olive oil to whisk up the dressing.

I added black beans and corn, tossed it all together, and Wha-lah - -
Southwestern Quinoa Salad
This was really really good!!  I'm glad I tried something new!

INGREDIENTS:

  • 1/3 cup fresh lemon juice
  • 1/3 cup olive oil
  • 3 tbsp chopped fresh cilantro
  • Sea salt and fresh ground black pepper, to taste
  • 1 cup quinoa, rinsed and drained
  • 1 tsp cumin seeds, toasted, or 1 tsp ground cumin
  • High-heat cooking oil (such as sunflower, safflower, peanut or grape seed oil), as needed to lightly coat grill grate
  • 2 cobs fresh corn, husks and silk removed (or 1 1/4 cups frozen corn, thawed)
  • 1 cup cooked black beans, drained
  • 1 plum tomato, diced
  • 1 zucchini or yellow zucchini squash, diced
  • 1/4 cup finely chopped red onion

INSTRUCTIONS:

  1. In a small bowl, whisk lemon juice, olive oil, cilantro, salt and pepper; set aside.
  2. In a saucepan, bring 2 cups water to a boil; add quinoa and cumin. Cover, reduce heat to medium-low and simmer until liquid is absorbed, about 12 minutes. Remove pan from heat and let stand for 5 minutes. Uncover, fluff with a fork and let cool for at least 10 minutes.
  3. Meanwhile, heat an outdoor grill to medium-high and lightly oil grate with cooking oil. Add corn, close lid and grill, turning once, until tender and lightly charred, 10 to 15 minutes. (Alternatively, boil cobs in a large pot of simmering water. Cover and cook until tender, 6 to 10 minutes.) Let corn cool, then cut kernels from cob. 
  4. In a large bowl, combine quinoa, corn kernels, beans, tomato, zucchini and onion. Pour lemon-cilantro dressing over top and toss to combine. Cover and refrigerate salad for at least 1 hour to allow flavors to meld, or up to 2 days.

Hum a little treat



This weekend I wanted to try my hand again at humus.  Remember this summer?  The cement looking black bean citrus humus that no one, including me, liked?  It's taken awhile to get over that. 
Today a friend brought store bought Sabras roasted red pepper humus to work and it was delicious.  I've always like this, but it's been awhile.  After enjoying it way too much,I thought - I'm gonna make my own from scratch! 
The hardest part was finding and then stirring the tahini!!  The people at Publix are always so friendly and willing to help me find the new and sometimes strange things I'm looking for (like the quiona that time - ha ha ha).

Okay, so here we go!  Chickpeas - check!  Garlic - check!
I just love how things look in my food processor. 


Then this very thick, separated and hard to work with tahini.  I'll be honest, I had no idea what tahini was.  I thought it'd be liquid - maybe like a martini (ha ha).  But no it comes in a Crisco like can.  I'm not sure if all tahini is like this or if I just had the one can that has sat on the shelf since this Publix opened, but it was very thick.  And tahini is a creamy puree of roasted sesame seeds.  So that's what McDonald's does with all the seeds that fall off the Big Mac's!!!


After processing the chick peas, lemon, tahini, and garlic until smooth, in goes the basil and roasted red peppers.  Looks like hearts!!!!  BLAH!


I spooned it into individual Pampered Chef glass dishes and chilled for about 30 minutes.  Then I grabbed some pita chips and dug in.  It was AWESOME!!!!

And today I weighed in for our Hold The Stuffing contest at work.  You had to be within 2 pounds of your pre-holiday weight and I was!!!  Yeay!  So they threw my name into the drawing for several $50 gift cards.  I also received my t-shirt for walking 350k+ steps in the Start! program!!!!
I may never get a 5K t-shirt, but I have my Vandy heart tshirt!!!

I was weak, soooooo weak


 All this tzatziki talk and the smell of it in the fridge....I've been craving gyros for days now. 
Today about 2pm, the craving was taking over.  Thank goodness I was at work.  But, I did GOOGLE gyros and the street of my office.  Sure enough - I found Kabob Gyro!!! 



And here it is in all it's succulence!!!  I even had him throw on a few banana peppers.  It was soooooo good!  And I didn't feel stuffed afterwards.  The pita was a thin rough dough, the lamb had a zip, and the tzatziki was awesome!!


He forgot to give me napkins, but let me tell you - not a crumb missed my lips!  =)
I don't even feel guilty!  Hope the scale agrees!!!

Just Dance and Make Tzatziki

 As you can see by my super sultry Snoopy boxer set, I am a diva on the dance floor with Just Dance 3.  We bought it for kinect on Wii at Christmas but yesterday was the first time I've done it.  OMG I'm loving it!!!  30 minutes of dancing on this = 145 calories!!!!  The kids and I do it and my husband did tonight - but see that ceiling fan above my short 5'3" self?  Well, he is 6' and when he raised his hands, with the ceiling fan on - WHACK!  His thumb got hit by the fan blades and there was blood shed.  None the less, we're having fun!


Now onto my newest creation - which isn't new at all, it's 100's of years old!  Tzatziki (taht-zee-key) sauce, or as some call it cucumber yogurt dressing.  It's Greek, it's smothered on your delicious Gyros, and it's low fat and low calorie!!!  My boss is Kurdish and she and I discuss healthy eating and recipes.  She was saying in her culture they do not drown their salads in "this dressing like you Americans!"  I second that!!  My husband eats his salad with salt and pepper alone!  That I can handle, but just dry, uh, no.  My boss said if anything they use cucumber yogurt dressing or Tzatziki sauce.  Ah, I knew that right away!!!  So I thought I'd make it and try it for dressing!


Everything you see here are the ingredients for Tzatziki.  
 2 tbsp olive oil, 16 ounce Greek yogurt drained, 3 cloves garlic, 2 cucumbers peeled and seeded, the juice of 1/2 a medium lemon, 1 tbsp chopped fresh dill, and salt/pepper to taste.


With my pickle fetish, you can imagine how much I love dill!!!  A friend grows her by her pool and I love the smell as you run past the herbs as you jump in!  I'm definitely adding dill to my herbs this spring!


 I don't know why, but I just think that looks so pretty!
I love cucumbers - they smell so clean and taste so yummy!
Toss in all the ingredients and process.


You can see the dill!!!  
Pour into a glass or ceramic dish, cover, and chill for at least an hour.
Believe me the taste drastically changes! 



And then, while surfing the net, toss some lettuce, black olives, pepperonchini's into a bowl with about a tbsp of fresh tzatziki and enjoy!!!

Now the only thing about making this tzatziki is that the whole time I was thinking of gyros.  My mouth waters now at the thought of the thin cut lamb, rolled with onions into pita bread and covered in tzatziki.  So when I tasted this dressing it seemed different.  Like it was missing something.  It took me awhile but then I added horseradish - about 2 tbsp.  That kicked it up a bit and tasted great.  
I am still going to have to find myself a gyros real soon!  I'm craving one for sure!!!

Super Sunday

What a week!!!  I have to say I feel pretty good!!!!
Fruit and veggie only days went exceptionally well and I want to incorporate into my weekly routine.
I expanded my flavors of smoothies this week!
First was Mango, strawberry, peach, pineapple!  OMG This was AWESOME!  I felt like the guy in the Sonic Commercials - WAKE UP THOSE TASTE BUDS!  DING-A-LING-A-LING-A-LANG!

I love my smoothie to go maker!  I think I got it at Walmart about 3 years ago.  Target now has them in multiple bright colors.  The clear part (the cup) comes off and holds up to 16 oz and the lid is a plastic lid that has a sipping hole with a sliding cover for it. I make my smoothie, slap on the lid and head out the door - fits in my cars cupholder without issue.
The second flavor blast I made was Blueberry Key Lime pie.  OMG it was so good there was no time for picture.  I slurped it down like there was no tomorrow!
To make these wonderful breakfast or anytime treats - I put about 3/4 cup skim or 1% milk, 2 large dolips of low fat vanilla yogurt and then about a 1/2 cup of any frozen fruit and SMOOTH!!!  I used to use sweet n low but with the vanilla yogurt, there is no need!  The kids love these too!!  The blueberry kiwi is only 214 calories for 16 oz!!!!!  I haven't calculated the mango mixture yet.

Friday nights around here we make homemade pizzas.  Well trying to be good I mainly had salad, but did give myself a teeny slice of the cheese on wholewheat crust.  I thought I had a good salad to pizza ratio.  Note that is a regular sized dinner place and see how small that slice of pizza is?  Plus I had more salad after that!



What else did I discover this weekend?  I discovered that if you heavily mulch for an hour, a 175 lb person would burn 413calories!!!  If you only moderately mulch, only 318.  
Well yesterday, we heavily scooped mulch from the root hole the old tree was ground into the back of my husbands pick up truck, then once we got it to the back yard, I unloaded that same mulch and shoveled it into the tree beds.  About 4-5 times.  I'd say that is heavy mulching!!!  My upper body has no strength!  Definitely sore today!

41 by 40

Well back in July I started my 40 by 40.  That was going okay.  Then I didn't do so okay.
I've joined myfitnesspal.com and saw the new badge (look to the right below my photo) you can add to show your progress on your goal.  Crap I've gained!!!  I mean, I knew that but CRAP!!!  Now I have forty-ONE pounds to lose.
I don't know if 40 pounds is still realistic, but with my great kick off for the new year, I feel fabulous!

Mon and Tue went great with fruits and veggies!  I like it so much, I'm going to start a meatless day every week!  And my body does feel cleaner, if you can believe that.  I don't even crave a glass of wine - gasp!!!
I'm enjoying my tea and learning a splash of milk is okay.  I'm also learning that pumpkins spice chai tea isn't so great at all!

I've done the 100 Workout twice! Once Monday and again yesterday.  Tuesday I could barely walk and my caves felt like they were being stabbed by daggers!  last night I sucked it up and did the 100 Workout and then ran outside for the last 10 minutes.  Much nicer than running around inside the house-  but I did what I needed to do Monday night.

I look forward to another great week and hoping I can withstand the weekend.  I did meet my biggest challenge yet on Tuesday.  I sat and happily ate Steamfresh veggies while my family ate a large supreme pizza from Papa Murphys right in front of me.  I didn't take on bite, one lick of the crust - nothing!  I did however scoop up any and all veggies that fell off on their plates!  If I can do that, I feel confident I can have a great weekend!

Happy New Year!!!!


Welcome 2012 and all the new and fresh opportunites you bring us!!!

I started my day off with a nice cup of Chai tea as I headed out the door to be installed as a council member at our church.  When I got home, I set myself up on myfitnesspal.com.  I really like this already!    All items I've eaten so far were in the database!!  Seems easy to use and it's free!  So I'm ditching my thick year calendar as a food journal and getting all techy!  ha ha ha

I also found this little ditty at Wal-mart:

I read an article on starting a slow detox - for 2-3 days only fruits and veggies.  I think I can handle that.  So I stocked up on fresh fruit and veggies and frozen fruits and veggies.  Then I found this detox tea when I was grabbing my Chai and I thought this would a good companion.  It says right on the box "Because it has no harsh laxatives or diuretics, DeTox is mild enough to be used every day for up to 30 days."  It tastes pretty good.  So we'll see how it goes.

Today I decided to try some of the New Year's Good Luck foods.  I know a popular item is Hoppin John but I didn't think the kids would go for that.  So I found this Southwest Hopping John and it turned out pretty good!
I had to soak the black eyed peas over night.  Today I sauteed garlic and onion in some butter, added chicken broth, the juice of a large can of Rotell, cumin, brown rice and ham. 


After about 30 minutes I added the beans the rest of the rotell, and let is cook til is soaked up the juices. I think I had too much juice so I would not add the Rotell juice, just drain it and add the tomatoes.   





Although the Southwest Hopping John has ham in it, being unsure if the kids would eat it or not, I also warmed up the Christmas ham, made green beans and mashed up the last of the potatoes in the pantry.



 Now with all those carbs, hubby thought he could give me a good workout!  He asked me to help him move the nativity set he and our son built.  Notice those are 2x4's, fence planks, and deck 2x2's.  That thing weighed a freaking ton!!!!!  I made sure to have our daughter take photos, in case I was crushed or my knee gave out.

And last but not least for today, our labrador retriever, Max, turned 2 today!  We're pretty excited about this because everyone keeps telling us this is the age where they start  to calm down and relax and not be so hyperactive.  We could see in the past month or so, he is a bit calmer, so we have hope.  Happy Birthday Max!!!  Love the tongue shot!
